This recipe came with the Lethin family and is a Thanksgiving MUST! We have added the blueberries to the mix just because we didn't have enough cranberries one year and that is the way we prefer it now.
Make some extra for left overs
Cranberry Ice
4 cups of
berries—cranberries or blueberry/cranberry mix
2 cups sugar
5 ½ cups
water
Put in
kettle, bring to a boil and then lower heat and simmer for 10 minutes, stirring to dissolve sugar.
Cool and
strain through a sieve or food mill.
Add:
½ cup orange
juice
¼ cup lemon
juice
Pour into
loaf pan and freeze.
Set out
about 20 minutes before serving. Using an ice cream scoop, spoon into dishes.
